The fresh vegetables are usually low glycaemic foods i.e.  they have more bulk with low sugar content. They have a major part in reducing the rate of elevation of blood sugar. This helps in reducing also the rate of elevation of insulin hormone as a response to the blood sugar elevation. This in turn helps in reducing the effect of "rebound phenomena".

The rebound phenomena means : If we eat fast any type of food with high sugar content, this will lead to brisk elevation of our blood sugar. This leads to brisk elevation of insulin level. Insulin will consume most of the blood sugar leading to lowering of the blood sugar very fast and making us very hungry again very fast. On the other side, if we eat slowly any type of food with low sugar content like fresh vegetables, this will lead to slow and low increase of insulin level leaving our blood sugar high for a long time making us feeling satiety or anorexic for long.
